Earth Family Mac & Cheese (Gluten Free!)

Panko Crusted Salmon
Ingredients:
1 pkg. Earth Family Spicy Fiesta Dip Mix and Seasoning
6 Tbsp. Butter, divided
3 slices Bacon, diced
1 cup Onion, finely chopped
2 tsp. Garlic, minced
3 Tbsp. Rice Flour
3 cups Whole Milk
4 cups Sharp Cheddar Cheese, grated
1 cup Parmesan Cheese, grated
2 oz. Cream Cheese
Sea Salt and Pepper to Taste
1 lb. Penne, Rice Pasta

Directions:
In a pot of boiling water cook pasta for 6 minutes. Drain and set aside. Preheat oven to 375°.

In a deep skillet cook bacon until crispy. Remove the bacon and drain. Remove 2 Tbsp. of the bacon grease from skillet. Add onions to skillet and sauté until translucent. Stir in Earth Family Spicy Fiesta, minced garlic and butter. Allow butter to melt, add flour and stir for 1 minute. Whisk in milk gradually, simmer and stir for 6 minutes. Remove skillet from heat and whisk in cheeses (3 cups of cheddar, 1 cup of parmesan, 2 oz. of cream cheese), add bacon and season with sea salt and pepper.

Combine pasta and sauce Combine pasta and cheese sauce in a 13x9x2 inch baking dish. Top with 1 cup of cheddar cheese and bake for 30 minutes. Let cool for 10 minutes before serving, if you can wait!
