Panko Crusted Salmon
Ingredients:
1 pkg. Earth Family Sweet Onion Dip Mix & Seasoning,
¼ cup Earth Family Teriyaki Sauce
1 tsp. Bone Suckin' Habanero Sauce
1 ½ lbs. Ground Beef
½ cup Onion, chopped finely
2 Eggs
½ cup Panko Bread Crumbs
¼ cup Flour
1 ½ cups Peanut Oil
1 Green Bell Pepper, seeded and diced in small to medium pieces
1 Red Bell Pepper, seeded and diced in small to medium pieces
1 ½ Pineapple, cups of chunks
2 cups Beef Stock or Broth
¼ cup Sherry Wine or White Wine Vinegar
3 Tbsp. Cornstarch
Sea Salt and Pepper to taste
4 cups Jasmine Rice, cooked

Directions:
Combine Earth Family Sweet Onion Dip, ground beef, eggs, diced onion and breadcrumbs in a medium bowl. Mix with hands until combined well and roll meat mixture into medium size meatballs. Place meatballs on a parchment paper covered baking sheet and place in the freezer for 15 minutes or until firm.

Whisk together beef stock, Earth Family Asian Sauce, sherry or white wine vinegar, and cornstarch, set aside.

Heat peanut oil in a skillet to a medium high. Roll meatballs in flour, and then fry them in the hot oil for 5 minutes per side, rolling them so they are brown on all sides. Remove meatballs and set aside on a separate plate.

Pour off oil from pan and bring back to a medium-high heat. When pan is hot, throw in the chopped peppers and cook for 5 minutes. Add pineapple to pan, cook for 5 minutes and then stir. Pour the Earth Family Asian Sauce/stock mixture into the pan, add meatballs and stir until sauce thickens. This should take about 5 minutes. Stir in Bone Suckin' Habanero Sauce, season with salt and pepper and serve over hot Jasmine Rice. Serves 6.
