Earth Family Roasted Veggie Orzo Salad

Panko Crusted Salmon
Ingredients:
2 pkg. Earth Family Garden Veggie Dip Mix and Seasoning
1 Purple Onion, diced
2 Bell Peppers, 1 yellow, 1 red, diced
1 Eggplant, diced
1 Zucchini, dice
2 tsp. Garlic, minced
2 Tbsp. Olive Oil
1 ½ cups Orzo Pasta, prepared according to instructions on package
1 pkg. Earth Family Garden Veggie Dip Mix and Seasoning
1/4 cup Lemon Juice
1/2 cup Olive Oil
Sea Salt and Pepper to taste
1/2 cup Basil Leaves, sliced thinly
1/4 cup Pine Nuts, toasted
1/2 lb. Feta Cheese, crumbled
1/2 cup Green Onions, sliced thinly

Directions:
Preheat oven to 425˚.
Toss Earth Family Garden Veggie Dip Mix and Seasoning, onion, bell peppers, eggplant, zucchini, minced garlic and olive oil together in a medium bowl. Spread on a large baking sheet and roast for 45 minutes, turning vegetables once.

Combine in a small bowl, Earth Family Garden Veggie Dip Mix and Seasoning with lemon juice and oil.

Drain orzo well. In a large bowl add the vegetables and dressing to orzo and toss to coat well.

Top with onions, pine nuts, basil and feta cheese. Serve at room temperature or chilled.
